Herb crusted salmon with tomato salsa

Method:

  1. This is one of recipes listed on the wine label.
  2. Preheat oven to 200°C. Place potatoes, cut-side down, on a board and make thin, evenly spaced cuts at 5mm intervals, about two-thirds of the way through. Place in a bowl. Add oil and rosemary mix, season with salt and pepper and toss to combine. Place in a roasting pan. Bake in oven, turning occasionally, for 1 hour or until golden brown and crisp. Transfer to a serving bowl to serve.
  3. Meanwhile, line a baking tray with baking paper. Combine breadcrumbs, parsley and chives in a bowl. Season both sides of salmon fillets. Press breadcrumb mixture onto flesh sides of salmon. Place salmon, skin-side down, onto prepared baking tray. Spray with oil. Bake for 10 to 15 minutes or until golden and cooked through.
  4. Serve with fresh salad and drizzle over dressing.

Ingredients:

  • 2 fillets of fresh salmon with skin on
  • handful of fresh bread crumbs
  • handful of chopped parsley and chives
  • salt and pepper
  • 4 medium Desiree potatoes halved
  • ratio of 1/3 castor sugar, 1/3 salt, 1/3 dries rosemary
  • good splash of olive oil
  • fresh salad leaves and your favourite dressing to serve
