Special Fried Rice

Method:

  1. Cook rice in the microwave as per instructions, cool, cover and put in the fridget to get cold.
  2. Crack and beat eggs, add salt & pepper to taste.
  3. Heat frying pan or wok and when hot pour thin layer of egg. Cook until crispy around the edges. Fold over and then slide onto board to cut into strips. Put aside.
  4. Fry crushed garlic in a little olive oil and once aromatic add green prawns, cook until prawns turn pink. Put aside.
  5. Cook red onion until clear and then add chorizo and bacon. Fry until crispy. Drain on paper towel and put back in the pan.
  6. Add cooked prawns, spring onions, peas and half of the bean sprouts to the pan. Cook until peas are done.
  7. Add rice and egg to the pan, mix well. Add soy sauce and stir through.
  8. Add fried shallots, corriander and the remaining bean sprouts, mix through and then serve in two big bowls.

  • 1 pouch microwave basmati rice
  • Olive oil
  • Salt & pepper
  • 2 eggs
  • 1 clove garlic
  • 250g green prawns
  • 2 rashers of bacon pieces
  • 1 chorizo, cut into small pieces
  • 1 red onion
  • 1 cup frozen peas
  • 2 spring onions, sliced
  • 2 tablespoons soy sauce
  • Handful fried shallots
  • Handful corriander
  • 1 cup bean sprouts
